This chicken and broccoli is the perfect lazy night dinner for the whole family. We love it over rice. I originally made it with curry seasoning instead of garam masala, but one time when I made it, I had evidently run out of curry and didn’t realize it until I had already started cooking. Having to think quick, I grabbed the garam masala as a substitution. What a great accident! Jay told me he loves it even more with the garam masala than he does with the curry, so that is how I make it now.
Cook Time: 1.5 hours (serves 4)
Ingredients:
-Shredded rotisserie chicken
-1 package frozen broccoli
-1 can cream of chicken
-1/2 cup mayo
-1/2 cup sour cream
-1 cup shredded cheddar
-1 Tbsp lemon juice
-1 tsp garam masala
-1 cup shredded parmesan
-1/2 tsp paprika
-2 cups cooked rice
Directions:
-Preheat oven to 350. Cook broccoli according to package.
-Mix soup, sour cream, mayo, cheddar, lemon juice, garam masala, and paprika in a large bowl.
-Arrange broccoli on the bottom of a greased baking dish. Sprinkle half of the parmesan on top.
-Add chicken, followed by the rest of the parmesan. Pour soup mixture on top.
-Bake at 350 for 30 minutes. Serve over rice.
