Meatloaf Recipe

If you ask Jay what his favorite things I make are, I guarantee my meatloaf and garlic mashed potatoes are on the list. In fact, it might be the most Jay requested meal I make. We love it are year long, but it is especially satisfying now that it’s getting colder outside.

Cook Time: 1.5 hours

Serves: 6

Ingredients:
2 lbs ground beef
5 slices of fresh bread food processed into crumbs
1/3 cup beef broth
1.5 Tbsp Worcestershire sauce
2 beaten eggs
1 tsp ground thyme
Handful fresh chopped parsley
1 Tbsp avocado oil
8 cloves minced garlic
2 cups diced red onion
Salt & pepper to taste
{Sauce Ingredients}
1 cup ketchup
1/2 cup chili sauce
2 Tbsp Worcestershire sauce
LOTS of pepper

Directions:

Preheat oven to 350 degrees. Spray baking dish with non-stick spray.
Add avocado oil to medium skillet over medium heat. When oil is hot, add onions and cook for 5 minutes.
Add garlic to skillet and cook for 1 minute. Remove onions and garlic from skillet and let sit.
Mix bread crumbs, eggs, Worcestershire sauce, and beef broth in a bowl. In a separate bowl, mix ketchup, chili sauce, Worcestershire sauce, and pepper.
In another (large) bowl, mix ground beef, thyme, parsley, salt, and pepper. Add bread crumb mixture and onions and garlic to beef mixture.
Spread beef evenly in baking dish. Pour half of the sauce on top. Bake for 45 minutes.
When meatloaf is done, drain beef and pour remaining sauce on top.
