Shrimp and Parmesan Risotto Recipe

This fabulous recipe is not only a crowd pleaser, but looks a lot more impressive than it actually is.

Cook Time: 30 minutes

Serves: 4

Ingredients:

5 cups chicken broth
4 Tbsp butter
1 chopped yellow onion
Salt and pepper to taste
3 cloves minced garlic
1.5 cups cups uncooked arborio rice
1.5 cups cooking white wine
1.5 cups parmesan cheese
2lb shrimp peeled and deveined
2 Tbsp lemon juice
1/4 cup half and half

Directions:

Bring broth to a boil in medium sauce pan over medium heat. Once it reaches a boil, remove from heat, but cover with a lid.
Melt half of 2 Tbsp butter in a separate medium sauce pan over medium heat. Add onion. Salt slightly and cook for 6 minutes.
Add garlic, and cook for an additional minute. Add uncooked rice and cook for 1 minute.
Add 2 cups of wine and cook while stirring for 3-4 minutes.
Add 2.5 cups of broth, reduce heat to a simmer, and cook for about 13 minutes. You want the broth to be almost absorbed, but not completely.
While risotto is simmering, melt 4 Tbsp butter in skillet over medium heat. Add shrimp and allow to cook completely. Add salt, pepper, 1/2 cup of wine, 1 Tbsp lemon juice, and half and half.
Remove from heat, add remainder of butter, parmesan, salt, pepper, and 1 Tbsp lemon juice.
